Blueberry-Orange Shortcake

If you enjoy blueberry muffins, you'll like this shortcake with fresh orange zest.

  • 1/3 cup sugar, plus 3 tablespoons
  • 3/4 cup orange juice, divided
  • 1 teaspoon orange zest
  • 2 cups biscuit mix
  • 3 tablespoons butter, melted
  • 1 pound fresh blueberries


  1. Preheat oven to 425° F.

  2. In a bowl, combine berries, 1/3 cup sugar, 1/4 cup orange juice and orange zest. Chill in refrigerator for about 15 minutes.

  3. In another bowl, combine biscuit mix, 1/2 cup orange juice, 3 tablespoons sugar and butter. Mix until soft dough forms. Scoop dough onto ungreased cookie sheet. Bake for about 10 minutes; until golden.

  4. Slice shortcakes, place berry mixture on bottom half. Replace top of biscuit, add a little more berry mixture and top with whipped cream, and juice from berries.
