Mediterranean Cauliflower Salad with Lemon Basil Dressing

Using cauliflower as an alternative to couscous, this delicious salad features Mediterranean-inspired flavors that are sure to get you ready for spring and summer.


  • 1 head cauliflower, broken into florets
  • 1 pint grape tomatoes, quartered
  • 1 small red onion, diced
  • ¾ cup crumbled feta cheese
  • â…“ cup Kalamata olives, chopped
  • â…“ cup pine nuts
  • 1 cup spinach, chopped
  • 3 Tbsp. lemon juice
  • 3 Tbsp. extra virgin olive oil
  • ¼ cup basil
  • 1 tsp. oregano leaves
  • 2 cloves garlic
  • ½-¾ tsp. salt, or to taste


  1. Add cauliflower florets to the bowl of a large food processor. Process until cauliflower reaches a fine, crumbled consistency (similar to couscous). Alternatively, grate the cauliflower using a box grater

  2. Add processed cauliflower to a large bowl along with chopped tomatoes, diced onion, feta cheese, chopped olives, pine nuts and spinach.

  3. In a blender, blend together lemon juice, olive oil, basil, oregano, garlic and salt until smooth. Pour dressing over salad and toss well to combine. Season with salt and pepper to taste. Serve cold.
