Spicy Cauliflower Burgers

Instead of black bean burgers, try this recipe for spicy cauliflower burgers as a vegetarian option for your next cookout.

  • ¾ cup quinoa, cooked
  • 1 cup breadcrumbs
  • 2 packages (12 oz. each) frozen cauliflower florets
  • ½ cup shredded pepper jack or Monterey jack cheese
  • 1 clove garlic, minced
  • 3 eggs
  • ½ tsp. ground cumin
  • ½ tsp. ground chili powder
  • ½ tsp. smoked paprika
  • â…› tsp. cayenne pepper (optional)
  • Pinch red pepper flakes (optional)
  • ½ tsp. kosher Salt
  • ½ tsp. ground black pepper
  • 3-4 Tbsp. extra-virgin olive oil
  • Juice from 1 lime
  • ½ cup cilantro, chopped
  • ¾ cup shredded red cabbage
  • Salt and pepper to taste (for slaw)
  • 2 Tbsp. mayonnaise
  • 1 tsp. adobo sauce
  • Buns
  • 1 whole avocado, pitted and sliced
  • 1 whole avocado, pitted and sliced
  • Green leaf lettuce
  • Sliced tomatoes
  • Sliced red onions


  1. Steam each package of frozen cauliflower in the microwave for 3 minutes in a microwave-safe bowl. Remove from microwave and let cool. Do not follow package instructions for this step to avoid mushy cauliflower.

  2. Pulse cauliflower and minced garlic in a food processor until small pieces form.

  3. In a large mixing bowl, combine cauliflower, cooked quinoa, ¾ cup of the breadcrumbs, eggs, cheese, 3 tablespoons of olive oil and seasoning. Combine until well-blended. Using an ice cream scoop, scoop mixture into balls and form into patties. Sprinkle remaining ¼ cup of breadcrumbs on both sides of patties. Should make about 10 patties.

  4. Heat a large skillet to medium-high heat. Prepare with cooking spray, or use remaining 1 tablespoon of olive oil. Cook burgers until golden brown on each side, flipping carefully to avoid breaking. Set cooked patties on a paper towel-lined plate.

  5. In a separate bowl, make the slaw by combining cabbage, cilantro and lime juice. Season with salt and pepper to taste.

  6. In a separate small bowl, combine adobo sauce and mayonnaise to make chipotle mayo.

  7. Serve on bun, topped with slaw, avocado, chipotle mayo, lettuce, onion and tomato. Enjoy!
