Strawberry Shortcake Mini Cupcakes

  • 1½ cups all-purpose flour
  • 1 tsp. baking powder
  • ¼ tsp. fine salt
  • ½ cup butter, softened
  • ¾ cup sugar
  • 2 large eggs
  • 1 tsp. vanilla
  • ½ cup buttermilk
  • 4 oz. cream cheese, softened
  • 2 Tbsp. powdered sugar
  • 1 tsp. vanilla
  • ¾ cup whipping cream
  • 18 small strawberries, cut in half


  1. Heat oven to 350° Line 36 mini muffin cups with paper liners; set aside. In a bowl whisk together flour, baking powder and salt; set aside.

  2. In a large mixing bowl mix together butter, sugar, eggs and vanilla until well blended. Add â…“ of flour mixture; mix well. Add half the milk mixture; mix until combined. Repeat ending with flour mixture. Divide batter into prepared pan.

  3. Bake 8-10 minutes until toothpick inserted in center of cupcake comes out clean. Allow to stand 2 minutes; remove to wire rack and cool completely.

  4. Combine cream cheese, sugar and vanilla in bowl. Beat at medium speed until creamy. Slowly add whipping cream, beating until stiff peaks form. Frost cupcakes; top each with a strawberry half.

  5. Refrigerate leftovers.
