Turkey & Apple Panini

Go beyond the basic grilled cheese sandwich to incorporate crisp apples and lean smoked turkey.

  • 2 large Stemilt apples
  • 8 slices sturdy bread (such as country Italian or multi-grain)
  • 4 tsp. butter, softened
  • ½-¾ lb. sliced smoked turkey
  • 8 thin slices cheddar cheese


  1. Slice the apples into very thin slices, removing cores but leaving the skin, and set aside. Preheat an electric panini press to approximately 300° F, or medium heat on a temperature gauge. If you are using a stovetop panini press, preheat the pan to medium.

  2. Assemble the sandwiches while the press/pan is heating. First, lightly butter each slice of the bread with the 4 teaspoons of butter. With the butter side out, layer the turkey, cheese and apples and put the second piece of bread on top, butter side up. Place on the press and close the lid. Cook until bread is toasty brown (time varies with appliance, but usually takes just a few minutes). Serve immediately. The inside of the bread may be brushed with Dijon mustard or mayonnaise after grilling if desired.
