Vegetarian Cauliflower Steaks

Thick-cut slices of cauliflower roast like steaks in the oven, for an original and delicious vegetarian entrée.

  • 1 large head cauliflower, leaves removed and stem intact
  • 1-2 Tbsp. extra-virgin olive oil
  • 2 cloves garlic, minced
  • 1 Tbsp. fresh lemon juice
  • Pinch red pepper flakes (optional)
  • Salt and pepper to taste


  1. Heat oven to 400° F. Coat a large rimmed baking sheet with cooking spray.

  2. Place the head of cauliflower on a cutting board, stem-side down. Using a large chef’s knife, cut into ½-¾” thick slices. The center few slices should remain more or less intact, but the outer slices will crumble into smaller pieces.

  3. Place the cauliflower on the prepared baking sheet, flat sides down. Sprinkle small crumbled pieces in any empty spots.

  4. Whisk together olive oil, lemon juice, red pepper flakes, salt, pepper and garlic in a bowl. Using a silicone brush, brush half the mixture over the cauliflower steaks.

  5. Roast for 15-20 minutes. Carefully turn each of the steaks over and brush with the remaining olive oil mixture.

  6. Continue roasting for another 15-20 minutes or until golden and tender, but not mushy.
